Slow Cooker Chicken Thighs (Ultra tender chicken!)
SLOW COOKER CHICKEN THIGHS

RECIPE:
INGREDIENTS:
2 lbs of bone-in skin on chicken thighs
2 tbsp olive oil
1 tsp. salt
½ tsp. pepper
1 tsp. onion powder
1 tsp. garlic powder
2 tsp. smoked paprika
1 tsp. brown sugar
¼ tsp. red pepper flakes
½ cup chicken broth
2 cloves garlic, chopped
INSTRUCTIONS:
Pat the chicken thighs down making sure they’re dry. Place them in a large bowl and set aside.
In a small bowl combine the salt, pepper, onion powder, garlic powder, smoked paprika, brown sugar, and red pepper flakes. Stir to combine the spices.
Add the olive oil to the chicken thighs and stir it around to evenly coat the chicken.
Sprinkle the spice rub mixture over the chicken thighs in the bowl. Toss to coat the chicken. Make sure the seasoning is over all of the chicken.
Place a skillet (I used a cast iron one here) over medium heat. Once the skillet is warm, place the chicken thighs skin side down in the skillet. Cook for 4-5 minutes giving them a beautiful crust on the skin.
In the bowl of your slow cooker, add the chicken broth and the chopped garlic. Stir to make sure the garlic isn’t clumped in one spot and even distributed.
Place the chicken thighs skin side up in the slow cooker and cook on low for 5 hours or until the internal temperature of the chicken thighs is 185 degrees F (or 85 degrees C).
Serve with desired sides and enjoy.

I would absolutely love to see somebody post a video on how to cook nice tender ground beef for tacos. Nobody ever covers that... I've used 80% lean to make taco and hamburger. No matter what stupid trick I use, the hamburger never comes out tender. I'm about to give up and slow cook ground beef in taco sauce because that is probably the only thing I have not done to create tender beef. Beef is easier to destroy than chicken and absolutely nobody has a nice video out there on how to cook tender, I repeat tender, succulent, perfection taco meat. It's like it's some taboo thing that nobody wants to address. Oh well, I am sure that if I throw it in the roaster and slow cook.. I will have the best taco meat ever because the frying pan is a joke as is the oven to cook tender ground beef. Sorry for the rent / soapbox.

Tip: if you have a blender. Blend in "chop mode" the chicken broth, broccoli, carrots, onion. Then pour it all into the crock pot and add your garlic, cornstarch, pepper and stir it all together.

I have followed this recipe for meatloaf three times in the last two weeks. The meatloaf and glaze is wonderful. The second time I made it I fell asleep and it cooked for twenty hours on low. This cook time is not recommended but I was till able to eat most of it. 🤷♂
